Pizza Project's naturally-leavened pies have arrived at the Charles River Speedway in Brighton after two years of working in a mobile pizzeria. Husband and wife co-owners Allie and Dan Spinale soft-launched their new location on Wednesday, April 19, and will have their official grand opening on Saturday, April 29.
"People are excited," Allie said. "People are ready for a new food option and a new space to check out while at the Speedway."
Speedway visitors can now enjoy Sicilian-style, square-cut slices to go, along with new sandwiches and sides, every Wednesday through Sunday.
The Sicilian-style pizza is a departure from Pizza Project's usual pie, which Allie Spinale describes as somewhere between a Neapolitan and New York style.
Allie says there's a technical factor to the switch in style. Their new 15 feet by 15 feet space works with an electric convection oven, rather than a wood-fired oven, and is more conducive to the Sicilian style.
But the switch is also because of Pizza Project's roots. Dan started getting to know dough in 2018, and the couple has continued experimenting with recipes ever since.
"It’s also something we wanted to do," Allie said. It's a new challenge."
Pizza Project will continue dishing up their classic round pizzas in their mobile pizzeria, popping up at the breweries and local spots where they first established their community of customers.
